Kourambiedes (Greek Christmas Cookies)

Hello there!!Β  I hope that everyone had a lovely Christmas with family and friends. πŸ™‚Β  My mom is visiting for the holidays, so we were up early this morning, had our coffee and hit the kitchen to start baking the traditional Christmas Cookies.Β  Β We were in there most of the morning because we made a few batches to hold us over after the holidays. :0Β We do that sometimes because we only make them once a year and one batch just isn’t enough. πŸ™‚Β  Β We made the first batch and placed them on my dining table, and by noon my husband had eaten a few more than he should haveΒ  πŸ™‚ but that’s ok because we are still in the holiday mood.Β Β If you love sugar coated, almond tasty cookies you need to try these cookies!!Β  They are soft and flavored with Cognac and stuffed with baked almonds.Β  ohhhh yummmm!!

We had finished baking, coating by mid afternoon and we are done for this year πŸ™‚Β Β Another year is coming toΒ  an end in a few days, and for my family and some of my friends it was a difficult one, but this is what life is all about.Β  Ups and Downs and dealing with the obstacles that life throws your way.Β  Right??Β  I am sure you agree with me πŸ™‚

Ingredients:

2 cups butter (room temperature)

1/2 cup Powder Sugar

1 shot Cognac

1 Egg

5 cups All Purpose Flour

1 teaspoon Baking Powder

3 cup Powder Sugar (for coating)

3/4 cups Almonds (chopped)

Preparation:

Start off by adding a tablespoon of butter into a sauce pan and melt, add in the almonds stir until golden brown.

Flour mixed with baking powder

In a mixing bowl add in the butter and whip until fluffy, continue by adding in the rest of the ingredients.

Blend all ingredients until well combined.Β  The mix should turn into a soft dough.

As you can see in the photo my mom shaped the cookies into half moons, and round cookies.Β  Place cookies into baking pan and then into the oven and bake at 180 degrees until golden brown.

When cookies have baked, coat with powder sugar while they are still hot.Β  The cookies should be fully covered with powder sugar.Β Β
