Omelette Frittata

Hello everyone!!Β  πŸ™‚

I made this delicious Omelette FrittataΒ  because both my husband and I absolutely love it.Β Β I wanted to make something that didn’t need to much time in the kitchen,Β  because I have also been working on some other small projects that I needed to finish asap.Β  Β This is aΒ pretty simple recipe with a variety of delicious ingredients that can be put together rather quickly, so if your in a rush try out this Frittata. πŸ™‚

When we first moved to NL I was shocked that ovens are quite small……I mean microwave small!! so as a cook this completely blew me away, and I have to admit baking is surely a huge challenge for me.Β  If your oven is large enough then just add the eggs into the mixture and then straight into your oven.Β  If not then do what I do toss the ready made ingredients from the skillet into a oil brushed baking pan and then add the eggs.Β  This is a bit of extra work but at the end it is all worth it. πŸ™‚

Who knows maybe someday I will be able to afford a nice size oven, I will keep hopingΒ  πŸ™‚

Β

Ingredients:

6 Eggs

1 cup Bacon (shredded)

1/4 cup Dill

1 cup Peas

1 Onion (diced)

1 Red Bell Pepper (chopped)

1/4 cup Cheese (optional)

1/2 cup Parmesan Cheese

SaltΒ

Pepper

Olive Oil

Β

Preparation:

P1010662

Dice dill.Β Β  (This Dill is from my little garden) πŸ™‚

P1010663

I used frozen peas…let them defrost before cooking.

P1010664

Chop pepper into pieces.

P1010665

Shredded Bacon

P1010666

Chop the onion before adding it into the mixture.

P1010667

In a large skillet add the olive oil and bacon stir on medium to high heat.

P1010669

Toss in the pepper and continue to simmer.

P1010675

Continue by adding in the remaining ingredients.Β  I did add some greek kefalotyri into this which is a bit on the salty side, but it’s up to you ifΒ  you would like to add extra cheese.

P1010670

Add pepper, salt and whisk.

P1010680

Place baking pan or skillet into oven and bake for 1 hr.Β  Β Β

Once the Frittata is baked turn over on a large plate, and top with Parmesan Cheese..

  • Very nice frittata, Sophie! It is one of our favourite dishes too. And I exactly know, how do you feel! πŸ˜€ I was surprised too, to be honest. First apartment where I lived had very small one and the second one already “decent” one πŸ˜€ However just because of the landlord who was not actually Dutch πŸ˜€ Good luck with baking! And I am sure, once you will have very nice one! Have a great day, Sophie! <3

I know right…..when they showed us the kitchen I asked where the oven was and they showed me this litle microwave thing and I told the landlord this is not an oven. heheheh

πŸ˜€ I can imagine! Hopefully, you can get your dream oven soon <3

We spent a couple weeks in Paris, in a small apartment, the oven was tiny! As were all the other appliances. It definitely took me some time to get used to it allπŸ’•
