Lemon Flavored Chickpea Soup

It has been snowing non stop for two days and it is so beautiful.  Why is it that after  it snows there is this sort of tranquility in the atmosphere?  I went out for the first time today in over a week, 😦  and had a lovely walk with Charlie…feeling better day by day.  This was Charlie’s first experience with the snow, running, playing, eating snow.

I thought I would add one more soup to my Soup Series, Chickpea Soup.  Simple, yet tasteful and a favorite soup in Greece after the famous Fasolada/Bean Soup.  


1 1/2 cups of  Chickpeas

1 large Onion diced

1 Garlic clove diced (optional0

2 Bay leaves

1/3 cup Olive Oil

1 Lemon Juice  (Optional)





In a large saucepan add Chickpeas and cover with water.  Boil for 20 minutes or until chickpeas are soft.  Toss in the onion, garlic, bayleaves and continue to simmer for 15 minutes.


Add in Olive Oil, salt and pepper and boil for 1 hour.  

Top by adding the lemon juice for that extra flavor.

  6. Really nice soup for those days, Sophie 🙂 I am glad you are feeling already better! And snow is amazing… I love this period of time, when winter comes, snows and it is nicely cold 🙂 Enjoy snow in the Netherlands. When I used to live there, I was lucky with snow over there 🙂

    Hmmmm yummy! My mom would have added a few pieces of lamb to this soup.
    I suppose that without meat it is also very good.😉
