Salmon Burgers with Roasted Veggies

Hello!! Sorry, I haven’t been able to post any recipes earlier this week,  I have been recovering from the flu. 🙁  I am feeling better day by day, and that means that I wanted something tasty to eat besides soups.  So,  I came up with Salmon burgers, light, and healthy added a few veggies I found in my fridge and had a wonderful meal.  Much more scrumptious after recovering from the flu.

Ingredients:



250 grams Salmon

2 Fresh onions diced

2 tablespoons of Parsley

1/2 Red Pepper grated

1/2 Red Pepper  (veggie bake)

Salt

Pepper

1 Egg white

1/2 cup Bread Crumbs

Lemon 

Preparation:

Cut Salmon into very small pieces and place into a large bowl.  Then, toss all the ingredients into the Salmon bowl, except for the lemon.

Mix all the ingredients together and make 3 patties.

The patties can either be fried or baked….it really is up to how you enjoy eating Salmon.  I like to bake the patties until golden brown at 180 degrees, for 1/2 an hour.  I also added the veggies to bake with the Salmon Patties.

Top with a few drops of Lemon and enjoy!
