Eggs and Tomatoes (Strapatcho)

Hello!  I guess your probably trying to figure out, what in the world  that word is next to Tomatoes and Eggs, hmmm well,. its Greek for tomatoes and Eggs 🙂  It is pronounced exactly as it is written Strapatcho, and this is a  Summer dish eaten warm, or cold.

I thought you would enjoy the Greek version of Eggs and Tomatoes. This dish is actually eaten for lunch and not breakfast, because it is prepared differently.  I personally make this all year round because it is a quick fixer, toss in everything and Poof it’s done.

Ingredients:

Serves: 4

6 Eggs

5 Tomatoes grated

2 Tablespoons Sugar

1 /4 Vegetable Oil

1    Onion grated

Salt and Pepper

Preperation:

Add into your sauce pan the olive oil, grated tomatoes, grated onion, sugar, salt and pepper.  Stir and simmer for about 10 minutes.  Add into the sauce pan, beaten eggs, stir and simmer for about 20 minutes. 

Simple!  Enjoy and as the Greeks say  Kali Orexi!!!!!!!
